I wouldn't say spotless but overall I'm pretty happy with it. Still a few thing to do.
As for the pedal set you can use the alloy pedals from a Golf GTI or R32 but as they are ridiculously expensive here in Australia I just used an el cheapo pedal cover set from Aliexpress and the footrest cover is from Ebay. Make sure you buy for RHD as LHD will not fit. The brake pedal is the same but the shape of the accelerator pedal is reversed.

Couple of better photos now it's daylight.
Was it hard to do? Not really. As I've already covered it with 3m Carbon wrap in the past I learnt what not to do then. This time it was pretty straight forward.
I just used a spray contact adhesive to stick it on. The most difficult part it making sure the edges are tight enough so that you can actually refit the surround. Oh and trying to get the heater dial rings back on was a PITA.
